Trees makes eating on the Seafront a party!

Noted actor and restaurateur Géza Weisz has spruced up the Zeedijk even more with the opening of his restaurant Trees, an atmospheric living room in a historic spot, serving well-made, accessible dishes.

Restaurant Trees, the latest culinary adventure of actor and restaurateur Géza Weisz (known from restaurants Gertrude and Oeuf, among others) and his business partner Tijn Verstappen (known from restaurants Van 't Spit, Le Forel, Pepito, Gertrude, Linguini, La Parole, Pazzi and Nonna), offers a unique dining experience in an attractive corner building on the Zeedijk. The landmark building overlooks the Arm Bridge, and the restaurant itself is characterized by an intimate ambiance created by curtains that hide the busy outside world.

"It is a dream to start a business with such beautiful dishes at this iconic spot in Amsterdam," Weisz told Het Parool.

Trees' interior reflects Weisz's love of old materials. The ceiling is made of two hundred-year-old American pine, and the walls are adorned with carefully chosen paintings featuring faces. The tables are set in sleek white with silver cutlery, adding to the sophisticated feel of the space.

The open kitchen is the heart of the restaurant, with a chefs table centrally placed. Chef Amadou Dia, who also stirs the pans at Gertrude, is described by Weisz as an "artist of dishes. Dia is not only the chef, but also an enthusiastic host, who enjoys personally serving the dishes at the table and explaining what he has created.

The menu at Trees offers a mix of sophisticated and approachable dishes. Guests can choose from four, five, or six courses, with creative amuses and delicious main courses. Examples include an amuse of a mousse of trout on a roasted parsnip chip, and pickled raw kingfish in a broth of tomato and chamomile. At the same time, the restaurant also offers more simple dishes, such as a burger, illustrating the versatility of the menu. According to Weisz, it is important that while the preparation of the dishes may be complicated, the result should not "taste like hassle."
