In 2026, Amsterdam will welcome a new culinary addition: Ottolenghi Amsterdam, situated in the iconic Conservatorium Hotel in Amsterdam-Zuid. Part of the recent renovations within the hotel, which will soon continue under the name Mandarin Oriental Conservatorium, the restaurant will attract both local and international guests.

The man behind this new culinary adventure is world-renowned chef Yotam Ottolenghi. Born in Israel and raised in the United Kingdom, Ottolenghi has firmly established himself as a master of vegetable-inspired cuisine. His style, steeped in Mediterranean and Middle Eastern influences, puts vegetables and spices at the center in a way that is both innovative and recognizable. This approach comes to life at Ottolenghi Amsterdam, where bold flavors mingle with fermentations and pickled delights.

With this, Ottolenghi embarks on his first Dutch project, brought about by his previous success in Geneva. Both Ottolenghi's name and approach have become synonymous with colorful, vibrant and bold dishes. His restaurants attract not only vegetarians, but also foodies looking for innovative flavors. With 11 existing locations, the majority in the United Kingdom, Ottolenghi is now setting foot in Amsterdam, reconnecting with the city where he once studied.
