Grammes: French bakery with exceptional bread and pastries

Grammes is a French artisan patisserie and viennoiserie owned by Maxime Papin and Nawal Batoun. This small neighborhood store is all about handcrafting: from the pastries and cakes to the viennoiserie with your coffee. You get your pastries there to take home or order ahead through the online takeout system.

Grammes has been a French artisan patisserie and viennoiserie on Maas Street since 2021. The business was set up by pastry chef Maxime Papin, along with co-founder Nawal Batoun. Their focus is entirely on French style: patisserie, cakes and viennoiserie, all handmade and prepared in their own bakery.

Inside, it feels like a compact neighborhood store where the counter is the main focal point. Behind it is an assortment deliberately kept sharp: not endless choice, but a selection of French patisserie and pastries, complemented by viennoiserie. Everything is made in-house, with an emphasis on artisan production and daily freshly baked pastries.

Besides the pastry display case, coffee plays a clear role here. You can combine French pastries with a cup of coffee, but the emphasis remains on take-out. Grammes is set up as a neighborhood bakery with a strong take-out attitude: you grab your box of pastries or bag of viennoiserie and walk right back out into the street.

Besides the pastry case, coffee plays a definite role here.

Grammes' French-inspired approach joins the recent wave of artisan bakeries in the city. Where other businesses sometimes veer in all directions, this store stays close to one clear idea: French patisserie and viennoiserie, handmade and neighborhood-sized. In doing so, it has become a fixture in the local bakery scene around Maas Street.
