Fitz's Bar is part of Pillows Grand Boutique Hotel Maurice at the Park, but it feels anything but an anonymous lobby. There's no full restaurant menu, so all the focus is on what's going on in the glass. You can tell by the way the team works with innovative techniques and carefully chosen drinks.
Head bartender Nick Vrielink is the driving force behind much of what happens here. Between 2024 and 2026, he won multiple national cocktail competitions and represented the Netherlands internationally. Those awards are reflected not only in his name, but also in the bar's status: according to recent reports, Fitz's Bar has been named "Cocktailbar of the Year 2026" by Gault&Millau. This emphatically moves the bar to the forefront within the Dutch cocktail world.
Within the neighborhood surrounding the park, Fitz's Bar is helping to establish the area as a place for high-end drinks and food. Where you used to come primarily for the park, you can now stick around for competition-level cocktails.
