CUE: A flavorful menu of fine dining, cocktails and beats

The new restaurant CUE that brings together food, drink and music has only been open for 12 months and was recently awarded a Michelin star for its cooking.

CUE on Utrechtsestraat combines a fine dining tasting menu with a focus on wine and cocktail pairings, with a preference for natural wines. As icing on the cake, the restaurant's basement houses a listening bar with special bites and beats. Chef George Kataras and sommelier Mohamed Aous and their team recently received a MICHELIN star for its cooking skills.

George Kataras cooks according to his own compass. His dishes exude the smell of fire and wood, where grill and barbecue come together with the vibrant freshness of fermentation and a subtle, northern sophistication. With just a few carefully chosen ingredients, he manages to create layered flavors. For example, a perfectly grilled, aged sea bass can surprise with notes of szechuan pepper, a hint of bergamot peel and a rich sauce pulled from fermented asparagus and the fish bones themselves.

That sophistication does not depend on expensive products, he proves with a dish in which simplicity shines: smoked broccoli is given character by combining it with anchovies, capers, fermented onion and a selection of herbs and leaves that provide tension and liveliness. Pure power in simplicity.

At CUE, everything is about experience. You can choose a shorter or more elaborate menu, both carefully crafted to surprise. The sommelier takes the experience to the next level with his inspiring wine choices, with natural wines playing a prominent role. The retro-like atmosphere of the restaurant continues seamlessly in the listening bar downstairs, where you can relax with a creative cocktail and sophisticated bites while the DJ provides an energetic soundtrack. CUE is the place to enjoy a culinary feast full of character and flavor in a relaxed atmosphere.

CUE offers an evening where food, drink and sound condition each other, focusing on the sequence and alignment of elements. 

The team behind CUE brought experience of high gastronomy to this project. That translates into tight serving routines and an attention to timing between dish and drink. The combination of culinary precision and a music-focused bar sets the formula apart. Visitors notice the ambition in every course and in the design of the listening room.
