Fitz Bar is part of Pillows Grand Boutique Hotel Maurice at the Park, but it feels anything but an anonymous lobby. It is an independent cocktail bar in East, with a clear focus: classic and modern cocktails with a story. The menu is built around the Roaring Twenties and cultural movements of the 20th century. Each drink is linked to a theme or period, giving you not only a taste, but also a piece of history.
The space is deliberately kept small and intimate. You really are in a hotel bar setting: low voices, glasses behind the bar, and a back wall full of premium and luxury spirits. There's no full restaurant menu, so all the focus is on what's going on in the glass. You can tell by the way the team works with innovative techniques and carefully chosen drinks.
Head bartender Nick Vrielink is the driving force behind much of what happens here. Between 2024 and 2026, he won several national cocktail competitions and represented the Netherlands internationally. Those awards are reflected not only in his name, but also in the bar's status: according to recent reports, Fitz Bar has been named "Cocktail Bar of the Year 2026" by Gault&Millau. This emphatically moves the bar to the forefront within the Dutch cocktail world.
