If you go purely for sunshine, it pays to choose smartly: some terraces grab it all afternoon, others disappear behind a facade at three o'clock. These are the places where you usually sit well once the light is there.
1) Waterfront - long sun terrace by the canal
Marnixstraat 246, Amsterdam-West
Waterfront is one of those places where the terrace immediately "turns on" as soon as the light gets there. You sit spacious, with bustle and water next to you, and it works just as well for lunch as for drinks.

2) Hannekes Boom - outside on the Oosterdok
Dijksgracht 4, Amsterdam-Centrum
Hannekes Tree is made for sunny afternoons: lots of outdoor space, water at your feet and a relaxed atmosphere. Ideal if you don't want to get too neat and just want to sit for a long time.

3) Pllek - NDSM, lots of sun and lots of space
TT Neveritaweg 59, Amsterdam-North
Pllek is large enough to still find a seat even on busy days. You sit on the IJ with open air and that typical NDSM feeling: spacious, loose and long dining without rushing.

4) Noorderlicht - NDSM terrace with an outdoor feel.
NDSM-Plein 102, Amsterdam North
Northern Lights feels just a bit quieter than some of the other NDSM terraces. Great if you're looking for sun but don't necessarily want to end up in the busiest row.

5) Tolhuistuin - ferry off, sit outside
IJpromenade 2, Amsterdam-North
From Central you're there in minutes, and you're immediately airborne and overlooking the IJ. Works well for an afternoon that starts with coffee and ends with drinks.

6) Café de Ceuvel - sunny, green and quirky
Korte Papaverweg 4, Amsterdam-Noord
The Ceuvel is one of those places where you automatically linger for a long time. Outside, you sit among greenery and creative clutter that feels just right, especially when the sun comes through.

7) Vooges on the IJ - large waterfront terrace
Westerdoksdijk 40H, Amsterdam Center
Vooges is a very nice "water + sun" combo, with a generous terrace on the IJ. Good if you're looking for something that feels just a bit more spacious and open than downtown.

8) WestWeelde - big outdoors in Westergas
Klönneplein 4, Amsterdam-West
WestWeelde is a good choice if you want to sit outside with space around you. It's one of those places where you can settle down with a group as easily as just the two of you.

9) Café de Ysbreeker - Amstelzon with classic feel
Weesperzijde 23, Amsterdam-East
On the Amstel, this is often just the right place when it's sunny. Fine place for lunch or drinks, with that "I don't have to go anywhere" pace.

10) The Gilded Unicorn - large city garden
Ringdijk 58, Amsterdam-East
Lots of space, lots of outdoors, lots of greenery. This is a terrace you go to when you want sunshine without immediately becoming urban.

11) 't Blauwe Theehuis - sun in the middle of the Vondelpark
Vondelpark 5, Amsterdam-Zuid
Park classic that simply works: big terrace, lots of greenery and perfect if you are already in the park or just want to go there.

12) Bar Bonnie - sunbathing by the Schinkel/Vondelpark edge
Amstelveenseweg 226HS, Amsterdam-South
Bonnie is ideal if you're in South/Schinkel and just want to land well for lunch or drinks. Terrace is lively, but not "center-chaos."

13) George W.P.A. - large terrace with many hours of sunshine
Willemsparkweg 74, Amsterdam-Zuid
George W.P.A. is one of those terraces where you often catch sun for a long time. Good place if you're looking for just a little brasserie feel, without the stiff stuff.

14) Strandzuid - urban beach near the RAI
Europaplein 22, Amsterdam-Zuid
The most beautiful beach of the city. Lots of space, beach feel and ideal with a group. When you say "sunny terrace" and immediately want that vacation idea, you're right here.

15) Ghent on the Schinkel - water + sun behind the Vondelpark
Theophile de Bockstraat 1, Amsterdam-Zuid
This is where you come for waterfront sunshine without it feeling too crowded. Good for drinks, but also great for something to eat once you're seated.

16) Marie Heinekenplein - Gloria's (square-terrace that takes the sun)
Marie Heinekenplein 33, Amsterdam-Zuid (De Pijp)
This square is often a nice place to sit early in March/April, as you catch a relative amount of sun here. Gloria's is one of those typical "plop down and stay longer" places.

17) Het Paardje - large terrace in the middle of De Pijp
Gerard Douplein 1, Amsterdam-Zuid (De Pijp)
When you say "sun in De Pijp," Het Paardje quickly comes to mind. Big terrace, lots of traffic, and ideal if you just want people-watching + sun.

18) tHuis aan de Amstel - quiet waterside terrace
Korte Ouderkerkerdijk 45, Amsterdam-East
This is one of those places you go to when you want to soften up the city for a while: greenery, water, space. Especially nice on sunny days when you don't want to land in the crowds.

19) Arie on the Corner - Sun on the corner in De Pijp
Ferdinand Bolstraat 24, Amsterdam-Zuid (De Pijp)
Arie is exactly what you want when you're in the neighborhood and the sun is right: plop down, drink, and be done. Very "neighborhood terrace" in the best sense of the word.
