Spontaneous dining out in Amsterdam has become more difficult. At most good restaurants you make reservations weeks in advance, and some lists only open on the first of the month. But there are addresses where you just walk in. These are them.

The restaurants below have in common that they welcome walk-ins as normal, not the exception. Sometimes that means waiting at the bar with a glass of wine. That's not a punishment. Here's the rundown, from a champagne bar on Rokin to a neighborhood cafe on Linnaeus Street.

Wijmpje Beukers (South)

Wijmpje Beukers was one of the first restaurants in Amsterdam to take walk-ins seriously, and they've maintained that policy for years. The menu changes every week based on what's good, the atmosphere is informal and the staff knows what they're doing. Bread with misobieter and ginger aioli is a fixture. Eatery Schotsheuvel (South)

Schotsheuvel is the sister of Wijmpje Beukers, in Oud-Zuid. Lunch and dinner without reservations, same informal tone, same approach to the menu. Try the sea bass tails or the goat cheese flap, and don't forget the cherry cheese toe. Fine place for those who live or work in South and want a quick good meal. - Ban Street 14, South

Café Binnenvisser (West)

Inland fisherman has one of the best bar experiences in town. Sit at the bar, watch the dishes being made up, order natural wine and leave it to the evening. Café Beurre (West)

Café Beurre on Van Limburg Stirumstraat serves entirely vegetarian dishes and has a dike of a wine list. The name says it all: butter is central, and you can tell by the richness of the flavors. No reservations, a small partially covered terrace, small plates to share. Bar du Champagne sits in a basement on Rokin and has more than 450 champagnes on the menu, from small producers to well-known houses. The kitchen makes small dishes to go with bubbly: Spanish oysters, anchovies, steak tartare, fish from the konro grill. Walk-ins are the norm; reservations are now available but not required. The Tros (East)

De Tros is the neighborhood cafe everyone in Amsterdam wants. Walk-ins at bar and terrace are the standard, for regulars a table is found whenever possible. The menu changes and combines French with Asian influences: steak tartare with char siu dressing, enoki tempura, brioche perdu for dessert. Natural wine plays a big part. Fully booked? Cannibale Royale (multiple locations)

Cannibale Royale is the steak brasserie that for years has been known as one of the few places where you can eat well even late at night. Walk-ins are welcome, though the establishment recommends reservations on busy nights. The menu revolves around meat from the charcoal barbecue: bavette, tomahawk, spare ribs, good fries. Spaghetteria turns on a simple idea: fresh pasta, homemade sauce, a short wine list and the famous scroppino. Walk-ins are always welcome at all the establishments; at some you can now make reservations. Not the place to dine long, but the place for a quick and good dinner on a weeknight. The Foodhallen (West)

The Foodhallen in the former streetcar depot in West is not technically a restaurant but works perfectly for this purpose: no booth reservations, you grab a table and choose what you want to eat. Dim sum from Dum Sum Thing, pizza from Renato's, sushi from Mr. Temaki, G&T from the Gin & Tonic Bar. Good for groups with different tastes, or for those who just can't decide. Foodhallen

Spontaneous dining out in Amsterdam requires some knowledge of the city. The addresses above have in common that they won't leave you standing. Sometimes that means waiting five minutes at the bar at Binnenvisser, sometimes walking straight through at De Foodhallen. It pays to be early, but if you arrive at De Tros or Cannibale Royale after nine o'clock you will always find a place.
