Nacarat
On the top floor of the building of the new Hudson's Bay department store, with a great view of downtown Amsterdam, Ron Blaauw recently opened Nacarat, a restaurant inspired by Middle Eastern cuisine where a rich experience of food and drink is paramount, as well as accessibility and high-quality service.
Under an impressive domed roof on the 5th floor of the new building, renowned chef Ron Blaauw reserves a lighter lunch, ideal for sharing, with fine wines, oysters and Lebanese bread with a variety of humus. Dinner will be served in a Tel Aviv style. Think appetizers to share; bread with dips like hummus and baba ganoush, various cold "meses" like pumpkin with cardamom yogurt, cashews and cilantro and hot meses like the "Jerusalem mix," which includes chicken heart, -milt and -liver.
Reserving a table at Nacarat is only possible by purchasing a ticket in advance. With this, Blaauw wants to prevent 'no-shows' and late cancellations. A restaurateur has to buy, schedule staff, cook and keep the table occupied. If you then want to give a good performance every night, similar to a theater, it helps if you can be sure that guests will come," Blaauw said.
"The name Nacarat was inspired by the warm orange color, like the setting sun that can be seen through the restaurant's glass roof."
