Jinweide Brings Lanzhou Hand-Pulled Noodle Soup to Museumplein

Jinweide is all about one thing: traditional, hand-pulled beef noodles from Lanzhou. In the open kitchen, you can watch as the noodles are freshly rolled out and the soup bowls are assembled. It’s a casual spot with quick service and a small self-service bar offering side dishes.

Jinweide, located near Museumplein, is entirely dedicated to one specialty: Lanzhou-style hand-pulled beef noodles. This is a Chinese noodle soup where the noodles are made by hand right there on the spot. In the open kitchen, the dough is stretched, beaten, and pulled into long strands, which go straight into the pot. As a visitor, you can see exactly how your bowl of noodles is made.

The place operates in a casual, cafeteria-style setting. You walk in, make your choice, and get your food relatively quickly. There’s no elaborate table service, just a quick turnaround where everything revolves around the bowl of soup in front of you. That fast service fits with Jinweide’s concept, which the chain also uses in other cities and has now expanded to the neighborhood around Museumplein.

The eye-catcher is the open kitchen, entirely dedicated to noodles. There, the team is constantly pulling noodles and finishing bowls of beef soup. The sound of slapping strands of dough and the pace behind the counter define much of the atmosphere. The space has a no-frills layout, more like a cafeteria than a restaurant, with the food preparation serving as the visual centerpiece.

The highlight is the open kitchen, which is entirely dedicated to noodles.

With this location, set to open in early 2025, Jinweide is expanding its concept to the Museumplein and De Pijp neighborhoods. This will introduce a specific regional Chinese dish to this part of the city: hand-pulled beef noodles from Lanzhou, served in a fast-paced setting where you can watch the preparation from start to finish.
