Kometen Brood has found a location in Building 022 on the Marineterrein that isn’t an obvious choice for a bakery. The building used to be a naval shooting range, which is still evident in the structure’s robust, industrial features. Today, the building serves as a shop where local residents can pick up their daily sourdough bread while looking out over the water toward the Oosterdok. A distinctive footbridge runs above the building, highlighting the site’s military history, while the terrace on the quay offers a peaceful retreat by the water. It’s an environment where the aroma of freshly baked sourdough bread is immediately associated with the fresh breeze blowing into the building from the IJ.
The driving forces behind this venture are Lard and Mas. They started their adventure on a small scale in their kitchen during the pandemic, but saw their passion for the craft grow into a bakery with its own headquarters at the NDSM shipyard. Yara, as the manager, keeps day-to-day operations running smoothly. The transition from a modest home bakery to a location in a former shooting range shows that the duo’s craftsmanship deserved a stage befitting the quality of their dough. With this expansion, they have created a space that is both functional and aesthetically appealing.
The wine list here is as serious as the cuisine. And that's exactly the point.
The concept is down-to-earth and revolves entirely around the quality of the product. The interior is open, making the baking processes almost palpable in the space. The brick walls and steel details of the former military building give the shop a rugged look that’s a far cry from a typical sandwich shop. Everything here is designed for simplicity, without compromising on the baking process. It’s an unpretentious place where the bakers’ craftsmanship takes center stage.
The menu features classics like sourdough bread and croissants, but the bakery is best known for its 100% whole-grain spelt bread. You can also enjoy a variety of pastries and simple lunch dishes there. The wine list here is taken just as seriously as the cuisine. And that’s exactly the point. Every product comes from their own bakery, where the focus is on traditional techniques and wholesome ingredients. It’s clear that Kometen Brood aims to be more than just a retail outlet, by bringing the baking process back into the spotlight in a neighborhood with a rich military history on the outskirts of the city.
