Salmuera's story begins with two Dutch brothers with Argentinean roots: Vincent and Thomas. Growing up with the smell of charcoal and the warmth of elaborate asados in the village of Pipinas, they learned early on that food is more than nutrition - it is connection. That philosophy is still at the heart of the restaurant. As it is in Sins of Sal, their other restaurant where experience and identity come together, storytelling is central.
Since opening in 2015, Salmuera has evolved into a place where boundaries are blurred. Although Argentine cuisine is the foundation, the menu reaches much further. Influences from Mexico and other Latin American countries create a dynamic menu where tradition and innovation go hand in hand. Think dishes inspired by centuries-old cooking techniques, but with a contemporary twist that fits perfectly with cosmopolitan Amsterdam.

The name ‘Salmuera’ refers to a traditional brine of salt and spices used in preparing asado meat. It is a subtle nod to the essence of the cuisine: pure, powerful and full of character. In the kitchen, Vincent and Thomas translate their personal stories into dishes rich in flavor and emotion. As they say themselves, sharing their cultural heritage through food is not a choice, but a necessity.

The location also adds to the unique experience. The restaurant is located in a monumental building from the 17th century, once owned by Lucas Bols. The building's rich history is still palpable, from the original bar to the authentic floors. At the same time, Salmuera brings a modern twist here with Amsterdam's first mezcaleria - a place where tradition meets contemporary cocktail culture.
