Back in De Pijp, he translated that knowledge into his own concept: artisanal charcuterie as the backbone of the menu, suitable also for those who eat Paleo.
The bread is baked fresh daily; the pitas are steamed for a soft, airy texture. The most famous sandwich is the ribs sandwich: smoked short ribs, proprietary aioli, lettuce, salty pickles, tomato and red onion.
