Wils: Michelin-worthy fire at Olympic Stadium

With the arrival of Joris Bijdendijk's restaurant Wils at Stadionplein, Amsterdam has rightfully added a new culinary entertainment area. After NENI, Mr. Sam and Bar Baut, the renovation of the area around the Olympic Stadium is finally complete.

At Wils, everything revolves around the essence of cooking: fire. Behind the impressive open kitchen, Master Chef Joris Bijdendijk, Chef Erwin Oudijk, Friso van Amerongen and Chef de Cuisine Thomas Val work daily on refined dishes straight from the wood oven, hoist grill or fire pit. The style is pure and thoughtful. No excess, but top-quality seasonal products that, thanks to fire, take on a deep, almost instinctive flavor.

So the fact that Wils has since been awarded a Michelin star feels like a logical next step. After the success of RIJKS Bijdendijk proves once again that gastronomy does not have to be complicated to impress. It is precisely the simplicity, precision and attention to the product that make a dinner at Wils special.

The location also tells a story. The name Wils refers to architect Jan Wils, designer of the Olympic Stadium for the 1928 Games. At the time, the Olympic fire burned here for the first time in history visible to the city. Nearly a century later, that fire flares up again at Stadionplein, this time as culinary inspiration.

Restaurant Wils is located at the back of Move Amsterdam, an interactive experience about mobility and innovation. That combination of forward thinking and craft makes this place unique. While inside is all about the future of mobility, Wils actually harkens back to one of the oldest cooking techniques in the world.

“At Wils, the fire burns not only in the kitchen, but in everything the restaurant aspires to be: pure, warm and unforgettable.”

In addition to the cuisine, the team also plays an important role in the overall experience. Sommelier Barbora carefully selects wines that seamlessly complement the smoky and sophisticated flavors of the dishes, while Pastry Chef Tania creates desserts that subtly bring elegance and fire together. Whether you take a seat at the kitchen table, the bar or an intimate table by the window, Wils is all about experience.

In a city where restaurants follow each other in rapid succession, Wils manages to stand out by going back to basics. And therein lies the luxury.

RIJKS: 1 Michelin star with a distinctly Dutch signature

"Low Food" at its best: ingredients from here, flavors from around the world, star-level precision.

rijks-restaurant-amsterdam_1

This is not a "museum restaurant" in the traditional sense. RIJKS is a serious fine-dining destination that happens to be next to world-class art - and you can taste that in the pace, ambition and details.

Mr. Sam Asian Bistro is a modern Japanese cuisine and bar in South, with a menu full of contemporary Japanese and broader Asian-inspired dishes. Think sushi and noodle dishes, combined with a serious cocktail bar. After an update to the concept, the emphasis is now even more strongly on elaborate dining and drinking in the evening.
