Taiko Cuisine: Cherry Blossoms at the Conservatorium Hotel

As the cherry blossoms begin to bloom in Amsterdam, Taiko Cuisine - in the sought-after Conservatorium Hotel - unpacks with a Japanese-inspired Hanami menu. From spring until the end of June, enjoy a 5- or 8-course Omakase here that focuses on delicate sakura and spring produce. Pure finesse, straight from chef Schilo van Coevorden.

Taiko - a culinary icon led by Schilo van Coevorden - is offering an unparalleled taste journey this summer. The Hanami menu is an ode to the Japanese tradition of "flower viewing," where flowers and seasonal produce celebrate coming together. Think chilled asparagus cream with Dutch shrimp, Balfegó tuna with sakura-ponzu and a dessert of white chocolate, sakura and raspberry - refined dishes that celebrate spring in flavor and color. Vegetarians can opt for an innovative Omakase menu featuring seasonal vegetables such as miso celeriac and creative sushi.

In addition to these flavorful creations, Taiko offers the option of matching wine and sake pairings to enrich every bite. The setting? The former Conservatory drum room, now with high ceiling, modern-Asian ambiance and soft live drumming on weekends - a sensory experience of texture, rhythm AND taste.

Taiko was awarded "Asian Restaurant of the Year" in 2023, a testament to its excellent balance of authenticity and sophistication. Previously, Schilo surprised with seasonal themes such as rice, in which he elevated simplicity to art.

For those who want a taste: the 5-course Hanami menu starts at €95, or opt for an extensive 8-course vegetarian menu starting at €120. Reservations can be made through the Taiko website or by phone. Please note that Taiko will be closed for summer break from July 20 to August 17.
