BRONS: Dennis Huwaë opens all-day hot spot in The Jewel

The Baarsjes in West will soon have a new culinary destination. On the spot where star restaurant Daalder set the tone for years, chef Dennis Huwaë starting in May its new concept BRONS. Located in the characteristic The Jewel this new establishment promises a fresh, accessible interpretation of waterfront culinary enjoyment.

With the arrival of BRONS, the focus shifts from sophisticated dining to an approachable all-day experience. Where Daalder known for years for its gastronomic signature, Huwaë now deliberately chooses a place you can walk into at any time of day. From a quick coffee in the morning to a relaxing drink in the afternoon - BRONS responds to the rhythm of the city and its residents.

The waterfront location is an important consideration in this regard. The spacious terrace makes BRONS attractive not only to local residents but also to passers-by, walkers and boaters who want to moor spontaneously. This dynamic translates into a flexible concept in which sitting and takeaway come together seamlessly.

The menu deliberately remains compact and recognizable, with dishes that combine comfort and quality. During the day you will find fluffy pancakes, brioche feuilletée and eggs benedict, while later in the day there is room for accessible classics such as sandwiches, a smashburger or a changing dish of the day. There is also an emphasis on good coffee, fresh pastries, matchas and homemade lemonades - perfect for those who only want to settle down for a moment.

“BRONS is not a destination for one moment, but a place that moves with you - from first coffee to last sun on the terrace.”

At the same time, this opening also marks a shift for Daalder itself. The restaurant will close at this location in early May and return to its familiar spot on the Lindengracht, thus completing a circle.

With BRONS, Huwaë shows that culinary quality and accessibility can go hand in hand. It is a place that fits the energy of Amsterdam: dynamic, unconstrained and always on the move.

Dennis Huwaë goes back to roots, choosing focus and intimacy

Sometimes progress lies not in continuing to grow, but in going back to where it once began. Exactly ten years after first opening, chef Dennis Huwaë's restaurant Daalder is making a remarkable move: the Michelin-starred restaurant is leaving its location in Het Sieraad and returning to Amsterdam's familiar Lindengracht. A move that feels like coming home, but at the same time marks the start of a...

In the Baarsjes stands a former vocational school that trained carpenters and metalworkers more than a century ago. Now the building has been converted into a nightclub. Brick walls, tall columns and stained-glass windows provide the backdrop for house, techno and UK garage.
