Ricardo Da Cruz Paulino is the driving force behind the Ceintuur Theater. Together with chef Atti de Moll, the duo is committed to serving a high-quality rotisserie menu in a setting that is both a café, restaurant and event venue. In the heart of bustling South, the restaurant is located in a building that once served as a movie theater, built in 1921.
Led by Chef Atti de Moll, the rotisserie is the beating heart of the kitchen. After years of cooking at the highest level in Amsterdam's star gastronomy (including at restaurant Lars), Atti now opts for a more accessible and burgundian course. With his technical base from fine cuisine, he gives the simplicity of the rotisserie a high-end, yet casual signature.

The interior design was created by Willem Noorlander and Elèn Letort, who made creative use of the building's historic elements. This keeps the history alive while the open spaces also accommodate co-working and intimate dining. The aroma of freshly prepared rotisserie dishes fills the space as guests enjoy an aperitivo in the evening.
“Amsterdam has great restaurants, but a true rotisserie destination was still missing. That's what we want to be. Not just a place where chicken comes off the spit, but the place in the city where people go when they want to eat the best rotisserie,” said owner Ricardo da Cruz Paulino.
In addition to the regular restaurant program, Ceintuur Theater hosts recurring events that reinforce the social energy of the place. Samba Sunday's and Rotisserie Takeover bring together music, conviviality and culinary surprises. During Rotisserie Takeover, the restaurant invites several Amsterdam chefs to give their signature rotisserie, covering diverse worlds and styles from Moroccan to Mexican.
