Mr. Watson: Fire, ferment and plant-based dining

After years of pioneering on Linnaeuskade, Mr. Watson is making a striking comeback. At Wibautstraat 206, the iconic concept takes on a new form: rawer, bolder and with fire as its beating heart. What once began as Mr. & Mrs. Watson is now growing into a mature, contemporary place where plant-based cooking is anything but stuffy.

At Mr. Watson, you feel it right away: here, experience and taste come together, and a night out automatically takes on an extra charge. It's all about energy, contrast and character - exactly what you expect from a new hotspot in town.

At Mr. Watson, everything is about fire and fermentation. Think a botanical roast room where smoke, heat and umami come together in distinct dishes. The now legendary Lion's Mane steak remains a crowd favorite, but it's the details that make the difference: house-made ferments, spicy hot sauces and a menu that plays with texture and intensity.

The atmosphere? Which balances between urban and botanical. Raw materials, warm glow of open fire and a space that is alive - from the first espresso to the last cocktail. Because it happens behind the bar as well. No standard drinks here, but cocktails with attitude and specialty coffee that is as distinct as the food.

What makes Mr. Watson special is that it doesn't deny its roots. The playful reference to classics like fondue and tiramisu remains, but everything is entirely plant-based. A subtle nod to the origin of the name - and to its mission to change eating habits without compromising on taste.

“Mr. Watson proves that plant-based is not an alternative, but the new standard for those who dare to choose taste with character.”

With its location just off Amstel Station, the new venue is accessible, but the experience itself feels anything but ordinary. This is a place you stick around: for the food, the music from spinning vinyl records and the energy that slowly builds as the evening progresses.
