The former chef of the two-Michelin-starred Spectrum is strikingly breaking new ground with The Gym. The name refers to the special location: a former gym in the back of The College Hotel, complete with characteristic details from the past. Think high ceilings, a private entrance and a spacious terrace tucked away in Amsterdam-Zuid. A hidden gem that will soon be given a totally new culinary interpretation.<\/strong><\/p>\n

What makes The Gym especially interesting is the philosophy behind the concept. Schutte deliberately chooses a looser setting with \u00e0 la carte dishes that are more accessible to a wider audience. No complicated creations that you reserve once a year, but refined dishes that guests come back for regularly. Fish, seafood, many vegetarian options and a strong focus on fine wines and cocktails will soon form the basis of the menu.<\/p>\n
