Regional dishes, a wine list you won't find in the average trattoria, and an approach that doesn't allow itself to be swayed by trends. Now that story is expanding, literally a few doors down.<\/h2>\n<p>Chef-owner Leonardo Pacenti has been at the helm of Toscanini since 1999. Born in South Africa to an Italian father, he has built a business over the years that has its own rhythm. Founder Maud Moody started it all in 1985, and Pacenti has carried on that legacy. Working alongside him are Susan van der Sande and Bobby Oudshoorn as host and sommelier, two faces familiar to anyone who has ever sat at the table there. Both on the same street, reachable on foot in less than a minute. The new establishment offers a caf\u00e9-like setting, a looser version of the parent restaurant. No less serious, but different in tone. Those who know Toscanini know that the decor there never screams for attention: it's the cuisine and the glass that does the work.<\/p>\n<blockquote><p>Toscanini is one of the few constants on Linden Canal, a place that doesn't need to shout about how good they are.<\/p><\/blockquote>\n<p>Lindengracht has seen all sorts of things come and go over the years.
