The concept revolves around an all-day formula: the doors open at nine in the morning for breakfast, and on Fridays and Saturdays it doesn't close until three in the morning. Behind Bonnie are owners Omar Baggen and Thijs Barelds, associated with the Goudvisch family, known for catering establishments such as Arie on the Corner<\/a> and the Cousin of Fred<\/a>. At Bonnie's, they act emphatically as hosts: welcoming guests in a warm, homey environment here is not an afterthought but the core of how the joint operates. You sense that there are people behind it who know how a space feels.<\/p>\n

That space, by the way, is the work of Studio Modijefsky, an Amsterdam interior design firm with a reputation in the hospitality world. The building itself is a classic Amsterdam corner building, and the interior matches it: warm, not ostentatious, the kind of place where you stay an hour longer than you intended. No chilly design temple, no crazy theme. Just a place that's right.<\/p>\n
